Both battery indicator and screen time chart in battery options shows complete nonsense after update to Tahoe. I charged my MBP to full and unplugged, then launched YT for a couple of hours. Battery indicator got stuck at 99% and screen time showed zero hours/minutes. I shut it down and turned on again. Now battery indicator is at 95% and still does not drop when I use the system. Screen time at least got updated, but something is seriously wrong.

Batteries are a wear item like tires on a car. Their useful life is finite, and they will decline over time. Battery 'health' is the ratio of the current maximum capacity of the battery to the design maximum capacity. Apple considers a value of ≥80% to be 'healthy'.

Note that over time, Battery Health fluctuates and can go both down and up. In any case, the decline is not linear so you have nothing to be concerned about at this point regarding your battery.

Completely unclear what you mean by, "suffering from my screen time related data".
