Inconsistent dark icons for certain apps on iPhone and Mac

Those are up to the developers to change those apps. Note that on macOS the icons respect the setting in System Settings > Appearance, assuming the developer supports that.

Having said that, on iOS 26 there is a bug where the native app icons display as light or dark inconsistently. You can see that in the two pairs below where I took screenshots seconds apart, just having swiped away from the first Home Screen to the second one and back, and different Apple apps changed color from light to dark. That one is pretty clearly a bug, hopefully addressed in an iOS 26.x update.
