New App Launcher in Tahoe 26.0.1 - How to organize this mess?

I just updated my system to Tahoe and I'm hugely disappointed that Launchpad is gone. I see there's a new app launcher, but it's an absolute mess – everything just thrown together in one place. Terrible.

Is there ANY way to organize this thing properly? I'm looking for options like:

Hiding or removing apps I don't use
Pinning my most frequently used applications
Creating custom categories or folders
Moving apps between existing categories
Basically anything to make this usable?

Please tell me it's not as limited as it appears right now. I really don't want to spend my life either digging through a chaotic list or constantly typing app names into search just to launch something.

Has anyone figured out a good workflow or workaround for this? Any tips would be greatly appreciated!

Launchpad is not available in macOS 26 Tahoe. Instead, Apple has replaced it with a Spotlight-based application library similar to that on iOS. By default, the Apps app replaced the Launchpad app in your Dock (if it was there). macOS organizes the apps, you cannot manually sort them. A possible workaround might be a 3rd party app, such as AppGridLauncher app (Mac App Store link) or https://www.launchie.app/.
