how do I delete apps on the new Tahoe update?
I have a few apps I would like to delete. I just update to Tahoe and is seems like everything has changed. Any help would be appreciated.

If they are apps you downloaded from ther App Store, you can go to app store via the App Store.app. Once it is open click on your account in the lower left corner
and it will reveal all your downloads. Hover over the app you want to delete and a circle with three horizontal dots will appear. Click on it and you will see "Delete" as well as other things you can do.

Applications downloaded from the Apple App Store can be dragged from the Applications folder to the Trash or Bin.
Then, empty the Trash or Bin.
Applications downloaded and installed from other sources should be checked with the developers for specific instructions.
App Store apps are typically well sandboxed. Most apps that you download directly, especially those that use an installer, leave bits and bobs behind. The advice from Owl-53 to check with the developer is spot on, for example:
...lists all the locations in the ~/Library folder where those bits and bobs are saved.
Other developers (e.g. Adobe) provide an uninstaller along with the app.
Just to add, you cannot delete apps that come preinstalled with macOS, with the exception of GarageBand, Pages, Keynote & Numbers.

I have always found that dragging apps to the Trash leave junk on one's Mac. Even apps from the App Store. I prefer to manually delete them a get rid of as much junk as possible.
Lest we not overlook iMovie, too
iMovie wasn't preinstalled with Tahoe on my Macs.
