No, no Apple Watch is waterproof, not even the Ultra. In fact I know of no watch of any brand that is waterproof. Even professional diving watches have depth limits.
Apple watches are water resistant, not waterproof. They conform to published standards of water resistance. There are stories of watches surviving for weeks or months under water. There are also stories of watches being dropped into water for a few seconds and being bricked.
