Cannot see/restore older time capsule backup

I have just gone through the laborious process of reverting to OS 15 Sequoia, since Tahoe has so many organisation flaws (side bar in safari?), and the design allocates too much real-estate to unimportant information and white space.

Who thinks the new version of contacts is more efficient than the old?

I digress. I've erased and reinstalled Sequoia on my M4 MacMini, but when I go to Time Machine to restore, the only option that appears, is th last backup done today, not the once from September 5th.

I am running disk utility on it, and it has flagged that the APFS version on the disk 2632.40.15.0.2 is newer than 2332.140.13, but I can't imagine that is an issue.

Help!
