Payment history for what exactly?
Apple Pay itself does not have payment history, as it's not a payment method, just a conduit.
You can access payment history for each card you use with Apple Pay, by tapping the card in the Wallet App and it will list your recent transactions there.
Depending on your card issuer or bank will be how long the history in the Wallet is.
For a full transaction history see your payment methods app, or monthly statement or contact your bank.
