is it possible for a contact name listed on ipad change the contact name in my iphone - example, I have a number listed as Minnie Mouse in my iPad but same number listed as Scooby Doo in my iPhone, which would take charge, would iPad's name update in the iPhone or vice versa?

Did you enter new names on both devices (different name, same number)? If so, they will be considered different contacts.
On the other hand, if this is a contact that already exists and you edit it on one device, it will be changed on every device using the same Apple Account. Whatever has been changed most recently will show up.
