ipad pro, ipados 26.1, my app background is white. My wife’s is white, and any related settings I could think of match her settings. I would like to change mine to white.

You can change your app background by pressing and holding on your Home Screen until the apps 'wiggle', then tapping Edit in the top left corner. Choose 'Customize', then use either the Clear or Tinted option and adjust as desired.
