why can't I delete some mail boxes in Mail?

Try unmarking the senders as VIPs. Once you remove all VIPs, select the mailbox, then try control - click/Delete.

Trying to delete the VIP mailbox- I don't use it, don't want it cluttering up the sidebar. Trying to find info on why several messages got put in there - I did not knowingly mark senders as VIPs and want to get that from happening again.
What mailboxes are you trying to delete? What happens when you try? Error message(s)? More information would help.
