How do I stop the photos I download to my MAC, from a DSLR camera, going onto my iphone? How do I stop my iPhone photos from being loaded onto my MAC? The same Apple ID is being used for both devices.

If you don't want your Mac and your iPhone to share photos and videos with each other at all, disable both iCloud Photos and My Photo Stream on both devices. (Just disabling both on one device would do, if you want the other device to share with some third device such as an iPad.)

Breaking the connection should leave the photos that came into your Mac from an external camera on the Mac along with the photos that came from the iPhone. Future additions and deletions will not propagate.
If I do this on my Mac will my downloaded camera photos stay on my mac or will they be removed from that device?
