What on earth can I do with Catalina. . The first two days it was fine then BANG! Kaput!

Can I reinstall a clean version of Mojave without Time Machine restore, as Catalina is hopeless and ruined my iMac's performance in every way. From Safari, to iTunes, to booting in 20 mins and unresponsive as and when it feels like it.

You would have to create a Mojave Bootable installer. Boot from it, erase your drive then install Mojave. Of course a clean install will erase everything on your drive.
