Restore Catalina from big Sur

Need to erase big sur , not working well on my MacBook Pro, too many apps and files not compatible with M1 silicon [yet] and RESTORE MY CATALINA SYSTEM any heldp?

Not sure what the M1's have to do with anything. If you have an M1 Mac you can't install Catalina. If you have an Intel Mac…
