If you have messages turned on in iCloud and delete them, they are gone. If you don't have text messages in the cloud, if you have a backup from before you deleted the messages, you can restore your phone from backup, but that will also return your phone to the date the backup was made and text messages you've received since you deleted the messages will be gone.
