On iCloud Drive, How do I NOT share the Desktop?

Because DropBox now limits people to only 3 devices I am moving to iCloud Drive. I have it set up on 2 Macs and it looks like it's working.

I do want to share my Documents folder, but NOT the Desktop folder. How can I do this?

In Finder, make your home/user folder visible in the Finder Sidebar by going to Finder/Preferences/Sidebar and checking the house under the Favorites section. Access the Desktop folder in your user folder and drag the folder you have on the Desktop out of the Desktop folder. That should remove the folder from your Desktop and stop the sync.
