My friend gave me an Apple Watch that he is not using anymore. It is a Apple Watch 5. He bought it from his cellular carrier and had it in his phone plan. I currently have a Apple Watch 3 but it is not connected to my cellular plan I just have to be with 30 feet of my phone. Will I be able to activate the Apple Watch five to my iPhone without adding it to my phone plan for cellular data since he originally bought it that away?

Yes tell your friend to cancel the cellular plan on the watch and remove the watch from his icloud account then you can use the watch as if it was the GPS only version of the watch.
