Hi there!
Can someone help me with a bug that I have.
After installing the latest Catalina update (10.15.7) I have been experiencing many freezes, which takes around 20-30 seconds.
I've restarted many times my macbook pro, rested pram and smc, but no luck.
What might be the problem, and how can I fix it??

There is another update to Catalina Supplemental 10.15.7 version 19H15. Suggest manually downloading and stop there. Restart computer in Safe Mode ( immediately hold SHIFT key ) at startup. The computer will load slowly, this is normal as Safe Mode will repair the system files and clear some cache file before loading. Then run the installer.
Sorry but this update is not compatible with my macbook pro

MacBook Pro (Retina, 15-inch, Late 2013)
Processor 2,3 GHz Quad-Core Intel Core i7
Memory 16 GB 1600 MHz DDR3
Graphics NVIDIA GeForce GT 750M 2 GB Intel Iris Pro 1536 MB
Other strange thing that I've noticed is that, when i highlight a word and right click my macbook pro freezes for 20-30 seconds, doesn't mater where i'm doing it, on browser, on mail, etc.
When I tried to install that update it said that it can't be installed on this disk. Volume does not meet the requirements of this update and all my drives Internal or external have yellow exclamation mark.
Usually, Yellow Exclamation Marks for External drives indicates the drives are not Mountable. That is because the drives are corrupted or formatted incorrectly. That can be possibly to fix using Disk Utilities to Check the disk and Repair it.
Now, the Internal drives, also with Exclamation Mark, is a much more serious matter. Try booting in Recovery Mode ( Command + r ) immediately at startup. Choose Utilities and run the same Disk Utilities doing the Repair disk. Run it until no error message appear. Re-boot in normal mode and attempt to Installation again.

Uninstall all third party apps that are Cleaners/Optimizers/Anti-Virus

Strange thing that now it doesn't freeze anymore.
Have a look over here for compatibility for Catalina. Are you mixing up Catalina with Big Sur. If so, yes the computer is not compatible with Big Sur macOS 11
If, as you say, the computer IS RUNNING Catalina 10.15.7 then this Supplemental 10.15.7 update is compatible with the computer. Where can you point to to claim the update is not?
Ok, I done all disk utility on recovery mode, no error was showed, but I stil can't instal that update you recommended.
For the Update to install it will Require at least 23 GB Empty Space on the drive. If there is not 23 GB Empty Space it will not install and it will not alert you with any type of error message.
Space is not a problem. I stil have 290GB free, of internal storage.
Disconnect all external drives, go to Utilities >> Terminal and type diskutil list. Please provide a screen shot of what is listed.
