With MacOS Big Sur I cannot figure out how to remove keyboard/emoji viewer from menu bar.

System Preferences > Keyboard > Input Sources. Uncheck "Show input menu…".

One other question if you could be so kind - Is there a way in Big Sur to rearrange the items in the menu bar? It used to be command + drag, but that does not work anymore.
Actually I don't know. I never bother to rearrange the icons in the menu bar. I have seen posts where others have, don't stick. If I were you I would create a new post and ask. :)
