Edit App Library
Some apps aren’t in the proper “folder” in the App Library on iOS 14. Can I edit this?

If you want to organize apps your own way, you can create folders on the other home screens and sort and label them as you see fit:

You can also let Apple know what changes you'd like to see in the App Library here:
As it is the first iteration of the feature, I imagine that, over time, Apple will make adjustments.

Personally, I like the fact that it takes care of things without any intervention on my part. However, I strongly suspect that Apple is watching how people are using it, looking at the feedback and that it will change, probably significantly, over time. Look at Do Not Disturb. It was very rudimentary when it was first released. It has, over time, gained a lot of features (though not all the ones I've suggested!).
