Where is it? I purchased the vesa mountable model, but it's impossible to mount upside down without this simple setting... Unfortunate. I'd like to hear reasoning on this...

We are just end product users like yourself.
My first reasoning on this question, is the air flow and cooling design.
My second, is far less dust collection with the Air Intakes on the bottom.

I hadn’t considered dust, good call.
You can’t mount an iMac upside-down.

You mount the VESA iMac normally to a VESA arm that offers full rotational articulation. Without that, you have limitations.
