Ethernet icon missing

MacOS never had an "ethernet/LAN" icon in the menubar. You'll find a WiFi icon, but no Ethernet.

You can install 3rd-party tools like iStat that includes some of that functionality. I use it for monitoring temperature and fan speed in my menubar, but I don't display network speeds. To each their own.

I'm not sure but in previous macOS versions there was ethernet icon in system tray

—On the fly you can rebuild the menu bar (your 'system tray') in the upper right from the Terminal.app copy & paste:

killall -KILL SystemUIServer

There has never been an icon in the menu bar for Ethernet as it's not changeable. Whereas WiFi is as there may be more than one WiFi network available to log into.
