Remote login to an encrypted drive after reboot

Oh I have two headless Mac minis one running High Sierra and the other running Big Sur. I want to encrypt their drives however when I reboot I am not able to initiate screen sharing in order to log into the computer. I must attach a keyboard and monitor. Is there a way that I might be able to do that?

Yes, it works. My read was the same. However, whenever I have tried it, it restarts the machine immediately. You enter the command, it asks for a sudo password, you enter the login UserID, enter the users password, and it restarts immediately.  Good if I initiate the restart but not good if I am out of town and the machine reboots on its own.
