Hello, I have an Early 2015 Macbook pro. It is currently 10.11 OS X El Capitan version. I tried appstore but I couldn't find any available updates. I want to update it to the lastest version as possible

Tips Monterey Upgrade - this computer MAY Qualify for the latest Monterey but do verify the specifics before attempting.
Notation - it might be better to upGrade to High Sierra First as it will better position it for the APFS File Format by installing a BOOT ROM required to function with the new APFS filing system,
Make Time Machine Backup is very useful and can be used to Revert to Previous Working macOS
Notation - Mojave is the Last version to support 32 bit applications / extensions and Drivers. Catalina, Big Sur & Monterey supports only 64 bit and there is no workaround.
Suggest using Go64 to find 32 bit application before attempting the upGrade. Some or many of the Application already installed may required update or upGrades to 64 Bit Versions.
Are there any AntiVirus, Disk Cleaner, Optimizers, Un-installers, etc installed which should be removed as per Developers Instructions. They are useless, unneeded, cause havoc and interfere with the normal operation of the OS and may even Corrupt the OS requiring a Reinstallation

Back up your data, check your applications for compatibility, and click on Monterey. It's a full-version upgrade, not an update.

The Apple Store will no longer show Upgrade versions of macOS because the User ( you ) decided, at the time an upGrade was offered, to not upGrade to a newer Version of macOS.
That is not bad but makes the UpGrade process more complicated but still doable.
If you follow the suggestions by either @Niel or myself - the upgrade can be achieved.
