FaceTime is great if all the users have Apple products.
But if you have to communicate with Windows or Android users, that might change the requirements.

I personally only know about FaceTime and Zoom. I know Apple's privacy policy. I also think Zoom only offers end-to-end encryption for paying users, not the free version. I know there are other services, but I do not know their privacy policies, except I would not trust FaceBook under any circumstances, nor any FaceBook owned company (like WhatsApp or FaceBook messenger). Google might also be questionable, but not always. Amazon, also not so much, but if you are looking at it, check their privacy policy. Skype is Microsoft, and it used to be secure, but I'm not sure now.
