I have had an Apple Watch Series 6 Aluminum for about 1.5 years now and I was wondering if I could put AppleCare+ on to it now. I did not after the first 1 year out of warranty and I was wondering if I was still able to. The watch is still in very good condition. I just want to future-proof it.

No, you can't. You had 60 days from date of original purchase to add a valid AppleCare+ plan. It can't be added after a year and a half.
Can I get AppleCare+ for my 1 and 1/2 years old Apple Watch?
