my mac is up to date but everytime i try to plu in my phone through usb it says update mac os

There’s an update sometimes required to Finder (newer macOS) and to iTunes (older macOS) required for newer devices.
This is an update to iTunes or Finder, and not a more familiar update to macOS.
If that update is not getting downloaded, boot into Safe Mode and try connecting the iPhone again, and which should trigger and apply the update.
