I spent the last 2 hours online trying to find : How to change the margins in numbers app for iPad , but I didn’t find a clear answer.
Can anyone help please?

The Numbers for iPad User Guide is full of answers - including document formatting and setting of margins:
This is not helpful. The linked document is for Pages, not for Numbers
Numbers…not Pages please. There is nothing in the user guide about page set up.
