Inability to view page layout in Numbers spreadsheets

I have used the old number to run my business since I git my first macbookpro in 2015. I was excited to learn I could use my old saved numbers file with the new Numbers 14 on my new macbook pro. so I just got my new macbook and loaded number as I am saving my old spreed sheets as new templates I realize numbers is in sheet layout not page layout. Now I realize there is no page layout? What in the actual F*%$ is going on. I now have no idea where my pages start and end with going into print view? where I cant actually change the location of my spreadsheets or text just enlarge or shrink my whole text box or spreadsheet. I have a 18 page contract template and as I change details for each client I need to know where my text starts and ends on a page so when converted to a PDF my contract looks professional and not all hap-hazard. This shucks in so many ways. Every other program I feel like has a page view which makes logical sense. APPLE PLEASE CHANGE THIS BACK!!!!!. I now need to go back to using my 10 year old computer. Another option would be letting people use the old numbers on the newer operating systems

Page layout went away something like 15 years ago. Last version that had it was Numbers '09. It was one of the really great features of Numbers. That and the list of sheets and tables on the left instead of tabs across the top. Then Apple decided to dumb down the Mac OS version of Numbers to be more like the iOS version and they did away with most of the things that made it great. I agree they need to bring back page layout but I know they won't. Same with the old toolbar where you could change text and background colors and do many other things without having to click click click through the tabs/sections in the sidebar. I've stuck with Numbers over all these years but my fandom of it went away after Numbers '09.
