If I have backed up onto my iCloud will I still have all my pictures and folders and apps the same?

If you restore an iCloud backup, all of that content mentioned in the support article will be restored. Your purchased content will download as well, apps, music, videos, books, etc. your folder structure should be restored, but that is not always the case. It worked for me on the backup that I restored to my new phone a few months ago, but YMMV.
