I managed to drop my apple watch, sent it off for insurance repair, they have sent a new watch. I am unable to pair as keep getting the error message the watch needs to be running on the latest version of watchOS!! But I can't update it without pairing it? HELP please!

You cannot use Watch OS 6 with an iPhone 6. If they sent you a Series 3 with Watch OS 6 on it then you'll be unable to use it with your iPhone. You need a Series 3 running Watch OS 5.
