Catalina has wiped all of my folders from Finder? I now have pictures and documents stored completely randomly and possibly even deleted (I just can't tell)? how do I get my folders back. I stored files locally precisely to avoid a cloud storage owner doing this, why has Catalina reached into the guts of my personal computer and done this? can anyone help??

In your System/Apple ID preference pane see if iCloud Drive is checked. If it is click on the Options button and see if Desktop & Documents Folders is checked. If it is then that's why you can'f find your files and folders.

So you can access the iCloud Drive in the Finder:
You can access the files in the Finder under iCloud Drive, copy them to an external HD, disengage the iCloud Drive and then copy the files back to their proper location.
When you uncheck iCloud Driver you'll get this warning:
If you've copied the files to an external HD you can try selecting Keep a Copy. If that returns the files to their original location you're done. If it's not what you want you can go ahead and copy from the external drive.
