Is there a way to use the blank black template in Pages (that is the one with the black background and white text) merely for its 'dark mode' feature but then export it as PDF as a white document with black text as you'd 'normally' do ?

Nope. The blank black template is to create a white text on a black background document. It has nothing to do with Dark Mode.

You would have to reformat the document every time you save/open it.
that sucks.. I thought there'd be away to use the 'dark theme' thing just for visual purposes and then export it as a 'normal' document.
