Pages will not open on my MacBook Pro. I have tried to download the new version but an instructed that it will only download on iPhone and iPad. All my documenta are in pages and I currently cannot access them. Help please/

If your MacBook Pro is running Catalina (macOS 10.15.n), or Big Sur (11.0.1), then you can download and install Pages v10.3.5 from the Mac App Store. This App Store has absolutely nothing to do Pages for iOS v10.3.5 which is governed by the iOS/iPadOS App Store on the phone or iPad.
In your case, sign into Apple's iCloud.com and use Pages for iCloud on your Pages documents.
