Is there any way to get updated drivers for my reliable old HP printer - officejet J5730, to make it work with Big Sur 11.1? It seems criminal to have to throw it away!

Did you ask the company that makes the printer? They are the people that makes the drivers, too.
I don't know if Gutenprint works with Big Sur, but it supports a lot of printers.
FYI: The OfficeJet J5730 is not among the supported GutenPrint printers.

Thanks, so I have found. Madness to be having to junk perfectly good equipment!
Everything has a shelf-life. Don't junk it, donate it. Probably still supported on Windows and Linux systems too.
