How to Avoid this Bug Sur issue re "malware?"

I've just purchased a new Mac Mini (Intel version) and am trying to bring over apps that I've been using for years. Having lots of problems with Bug Sur not allowing me to proceed because the app apparently doesn't pass muster on its security check.

All well and good and thanks, Apple, for keeping me safe. HOWEVER. I have my own malware software that actively scours for malicious stuff and would VERY much like to use some of my 'older' software, if it hasn't been 'blessed' by Apple.

What is the workaround?

p.s. The screen shot below shows the message when I tried to open Firefox brought over from my former Mac. I realized Firefox would be easy to re-download but that isn't true for a dozen or more other apps that I'd still like to use.

First, check to be certain you are running a current version of the app, either from the App Store or from the developer's website. Then if the issue persists and you want to run the app anyway, see the instructions in the "If you want to open an app that hasn’t been notarized or is from an unidentified developer" section of Safely open apps on your Mac - Apple Support
