How do I stop by Mail App from automatically opening?

I often have to screen share or screen record and my mail app will randomly open, sharing my personal email. I made sure that mail is not listed in system preferences> user & group> login items and mail preference "Prefer opening messages in split view when in full screen" is not selected. --> This happens regardless. This is extremely annoying. Is there a simply fix?

Boot in Safe Mode:

In Safe ModeLogin Items do not run at login, certain preferences are set aside, and damaged system files are then reset. So, once booted in to Safe Mode, wait 30 seconds, and then boot up normally, seeing if this no longer occurs. For instructions, go here: How to Use Safe Mode on your Mac - Apple Support
