Not sure if it still works, but check out the notunes app (avaialble on github or via brew). I haven't accidentally opened itunes/music in years, so I think it's still doing its thing.

Thank you! This totally fixes my issue with Sonoma 14.4.1. Apple Music still attempts to start, but noTunes shuts it down immediately. No more Apple Music hassles! And it's easy to turn off noTunes if I ever want Apple Music to start.

It was so annoying, every time I'd put my headphones down or pick them up Apple Music would start playing! It was so disruptive to my workflow! Again thank you!

Everyone with this issue should go to GitHub and get notunes. Open the zip, copy the app to your application folder and run it. No more Apple Music autostart!

Please see these links for guidance regarding your issue:

Make sure that Music is not open when you shut down your Mac, as you may see a prompt to reopen window the next time you login. You can uncheck that option when you shut down.

Check the Login Items under the System Settings > Users & Groups to remove Music as a Login Item, if that is enable.

> Change Login Item settings on Mac - Apple Support

As user muguy has posted, Music will open by default whenever you attempt to open a music file type. That default behavior can be changed.

Please install a video player for mac such as: Infuse, Kodi, VLC media player, Total Video Player, QuickTime Player, Total Video Player, MKPlayer, Elmedia Video Player,...

It will replace Apple Music and will not launch any apps when you connect bluetooth headset

I use Infuse, I feel very satisfied, Apple Music not start automatically whenever macOS detects a bluetooth headset is connected and I using Infuse to watch OTT IPTV television
