I recently upgraded to Big Sur but I have a small Mojave APFS volume that I can boot to occasionally use 32-bit apps (Mac mini 2018). In Big Sur I have a VMware virtual machine that I use for some Windows 10 apps and also for older macOS like Mojave.
Your response is very helpful, but I'm sad to lose my investment because of the bit change.
You can't. Upgrade or replace them, or if your computer shipped with Mojave or earlier, reinstall the older OS.
